Black Bean and Lentil Soup
Who's ready to try this veggie soup on a cold winter's day?
Heat the oil in a shallow, heavy-based saucepan. Add the onion and garlic and fry gently for 3-4 minutes until soft. Add the peas, fry for a minute then pour over enough boiling water to cover. Simmer for 3-4 minutes then pour into a liquidiser. Add the spinach and basil then blend to a rough paste.
Meanwhile cook the pasta according to the packet instructions then drain. Toss with the green sauce then serve with the cheese and a simple green salad.
