Chicken Cashew Curry
Hold tight for this chicken cashew curry, it tastes unreal.
Set a wok over a high heat until smoking then add half of the oil. Add the prawns, ginger and garlic and stir fry for a couple of minutes until the prawns turn pink. Tip everything onto a plate then add the remaining oil to the wok. Add the mangetout, spring onions and noodles and fry for a couple of minutes. Stir in the black beans, chilli bean sauce and soy sauce then return the prawns to the wok and toss through the noodles. Transfer to a warm bowl and serve.
