Cheese-Stuffed Burger

Ingredients

Serves 1

  • 160g sweet potato, cut into fries
  • 1 tsp olive oil
  • Salt and pepper
  • 100g 5% fat beef mince
  • Pinch smoked paprika or chilli powder
  • 20g cheddar cheese, grated
  • 2 tsp mayonnaise
  • 2 tsp tomato ketchup
  • Burger bun, split
  • 2 baby gem lettuce leaves
  • 2 slices tomato

Method

Preheat the oven to 200ºC. Tip the sweet potato fries into a roasting tray, drizzle over the oil and season with salt and pepper. Roast in the oven for 20 minutes until crisp.

Meanwhile put the beef into a bowl and season with smoked paprika, salt and pepper. Using wet hands, shape the mixture into two balls then flatten out. Make a dent in the centre of each with your thumb then fill with the cheese. Press the two halves together to seal then flatten out into a patty slightly larger than the burger bun.

Heat a griddle pan over a high heat and cook the burger for 7-8 minutes, turning regularly, until cooked through. Transfer to a warm plate to rest.

Mix the mayonnaise and ketchup together, spread over the cut sides of the bun and lay the burger on top of the bun base. Add the lettuce, sliced tomato and the bun top then serve with the sweet potato fries.

Tip

  • If you want to make the burger in advance, lay it on a plate and cover with clingfilm once you have sealed the cheese-filled patty then refrigerate until you're ready to cook.
