Chocolate and Almond Overnight Oats
You can't beat a big bowl of chocolatey oats. This is a great breakfast to prep like a boss.
Preheat the oven to 220°C and line a baking tray with greaseproof paper. Dust the chicken with the flour, season with salt and pepper, then then dip in the beaten egg. Coat the chicken in the cornflakes, then dip back in the egg again. Finally coat with the remaining cornflakes; this double coating will give you a really crispy exterior and will also keep the chicken really moist as it cooks.
Bake for 18-20 minutes until cooked through then set aside to rest for a few minutes.
Mix the mayo and lettuce together then pile it up in the bun with the chicken, gherkins and hot sauce. Dive in and enjoy.
