Dr Megan Rossi's Peanut Caramel Smoothie


Serves 2-4

  • 75g tinned white beans, such as cannellini beans, rinsed and drained
  • 30g oats
  • 150g cooked cauliflower, fresh or frozen
  • 2 ripe bananas, fresh or frozen
  • 60g peanut butter, smooth or crunchy
  • 3 medjool dates, pitted
  • 350-400ml milk of choice
  • ½ tsp vanilla extract (optional)
  • ½ tsp cinnamon (optional)
  • 1 pinch sea salt (optional)


Add all the ingredients into a blender and blitz until smooth.

Pour into glasses, serving with ice if you like it extra cold.

Top with a sprinkle of cinnamon or sea salt if you wish, serve immediately.


If you don't want to drink straight away, this will keep well in the fridge for a few hours.
