Raspberry and Peanut Butter Smoothie Bowl

Ingredients

Serves 1

  • 1 large banana, peeled and frozen in slices
  • 65g yoghurt, such as Greek, natural or soya
  • 40ml almond milk, unsweetened
  • 65g frozen cauliflower
  • 20g peanut butter
  • 65g frozen raspberries
  • 5g chia seeds

Method

Place the banana, yoghurt, milk, frozen cauliflower, half of the peanut butter and most of the raspberries into a blender. Start blending on a low speed and gradually increase the speed until you have a smooth ice cream-like texture.

Spoon the frozen smoothie into a bowl and top with the remaining raspberries and seeds. Warm the remaining peanut butter in the microwave and drizzle over the top to serve.

Tips

Frozen cauliflower helps to create the ice cream-like texture without impacting taste.

Smooth peanut butter works best here.

You can use the same amount of fat-free or low-fat yoghurt if preferred. You can also use skimmed or semi-skimmed milk here.
